What is chuck roast?
A chuck roast is any cut of meat that comes from the chuck, or the shoulder part of the beef. Other names for chuck roast include chuck eye, chuck roll or blade roast. Many times it is used to make a pot roast. A pot roast isn't a specific cut of meat—it's just a method of preparing a cut of meat by slowly braising it with liquid (like beef stock) until it's juicy and tender. Pot roast can be made with many cuts of meat but chuck is often used because the connective tissue melts as the chuck braises and self-bastes the beef, making it very tender.
